Chai

Chai preparation picture.

INGREDIENTS

-500 ml (2 cups) water

-500 ml (2 cups) milk 3.25% or soya milk.

-4 tsp. chai Camellia spice/tea mix, or another

-4 tsp. teaspoon raw sugar

PREPARATION

  1. In a saucepan, bring water to a boil. Add the chai mixture to the boiling water and simmer for 5 minutes.

  2. Add milk and sugar and bring to a boil.

  3. Remove from heat, cover and let steep 5 minutes. Add sugar if necessary.

  4. Filter to remove leaves and spices.

Note: If you use sweetened soy milk, reduce the quantity of sugar to 2 tsp, to taste.

Choose a full bodied Assam tea if you make your own blend of spices.

For a more milky chai, put 750 ml (3 cups) milk 250 ml (1 cup) of water.

Makes 1 liter (4 cups)

Homemade iced tea

INGREDIENTS

-1 orange, cut into small pieces

-1 small handful of fresh mint

-8 tsp Assam tea or other tea

-5 tsp raw sugar

-20 seeds of green cardamom

-5 seeds of star anise

-rose petals (optional)

-1 l cold water

PREPARATION

  1. Place all ingredients in large bowl and add cold water.

  2. Cover and let steep for 10 hours in the refrigerator.

  3. Filter and add sugar to taste. Serve cold.

Note: You can vary the tea and spices according to your preferences. A long cold infusion can get all the flavors of tea without releasing too much tannin, which gives a very refreshing drink. It is of course possible to make a hot infusion and dilute with ice to cool it.

Makes 1 liter (4 cups)

Mint tea

INGREDIENTS

-1 ½ tsp Chinese organic green Gunpowder Tea

-1 ½ tsp sugar

-1 large handful mint

-300 ml ( 1 ¼ cup) water

PREPARATION

  1. Warm the teapot.

  2. Put the mint into the pot and add sugar.

  3. Put the tea into a filter and rinse with boiling water. Place the filter in the teapot and add boiling water.

  4. Let steep 3 minutes (4 minutes if you want a more full-bodied tea) and remove the filter.

Note: For variety, you can put tea leaves directly into the teapot without using the filter. In this way, the tea will become stronger.
