Amidst the thousands of varieties of Chinese green teas, some are produced with 'ancestral' transformation techniques, others are using more recent innovations. Over time tea has seen changing fashions and modifications. This course explores the different styles, terroirs, botany and aromatic diversity of green and white teas.

Learn how to use the gaiwan while tasting a wide selection of exceptional teas.
