
Matcha Crepes with Maple Syrup Whipped Cream
Inspired by Japanese sweets, the Wagashi that often accompany Japanese tea ceremonies, this recipe perfectly combines the tastes of Matcha, maples syrup and cream. A pure delight to share.
Ingredients
Crepe
- 1/8 cup (10 g) of Matcha Sora
- 1/2 cup (70 g) unbleached flour
- 1 Tbs. cornstarch
- 2 eggs
- 1/4 cup (45g) sugar
- 1 cup (250 ml) milk
- 2 Tbs unsalted butter, melted
Instruction
- Sift the green tea into a bowl. Add flour and cornstarch; sift again. Make a hole in the middle of the mixture.
In another bowl, lightly whip eggs and sugar. Add milk and mix gently. - Slowly pour the wet mixture and combine until an even consistency is obtained.
- Add melted butter to the mixture and combine until an even consistency is obtained.
- Stir mixture until smooth and let sit at room temperature for 1 hour.
- Whip the cream with the maple syrup to the desired texture and place the mix in the fridge for 10 minutes.
