
Tea Popsicles
We've come up with two recipes for popsicles made from tea and fruit juice to cool you on a hot day. The first is with Lychee & Peony and Lychee juice, and the second with Nilgiri Coonoor, a black tea from our Tea Studio, combined with pear nectar. A pure delight!
Start by cold-brewing your tea. For 15g of tea add 1l of cold water and leave infusing for 8-10 hours in the fridge.
For this recipe we used our Jonque d'Émeraude, a green tea with lichee and poppy flowers.
Once the tea is infused and strained from the leaves, fill your mould to around 25% with tea.
- Fill the rest with lichee juice.
- Fresh raspberries are also a nice addition.
- Put this in the freezer for at least 2 hours.
This recipe works well with the black tea Tea Studio | Nilgiri Coonoor and some pear nectar.
