Two principal elements make this tea rare and unusual. Firstly, it has been made using yellow tea techniques and secondly, it originates from our neighbouring country, the United States. The founders of the farm have been cultivating tea there since 2012 and their practices are steeped in farm history, research and challenge.
The artisanal plucking and processing result in large leaves with stems. The smooth liquor has vegetal flavours of yellow beans and potatoes, and some surprisingly spicy notes of miso and mustard.
A tea for the curious.
