The Bermiok garden in the Indian state of Sikkim, offers us this small batch of black tea from the spring harvest (First Flush). Set in the forests of the Himalayan mountains, this family-run estate is cultivated using a blend of biodynamic principles and traditional methods to produce the tea. Through various farming projects, including coffee, this talented producer has built up an extraordinary expertise.
The blend of long dark leaves and buds gives the liqueur a golden, crystalline colour. Once steeped, the blend of these three cultivars (B157, AV2 and T78) reveals a range of zesty, spicy (ginger) and floral aromas. The sip begins with a woody, sweet (coffee with milk) roundness and quickly rises to the pleasant acidity of the fruity notes.
The complexity of the flavours linger on the palate.
