Praised for the beauty of its steeping leaves and the fresh chestnut scents they give off, Long Jing is the most famous green tea in China. Harvested in Shi Feng (original terroir), Zhejiang, this small production (20kg) is masterfully created by the Tang family, with whom we have been working since 2003. Complex aromas and smooth liquor, this grand cru combines aromatic richness and finely balanced flavors.
This multi award-winning Gyokuro is very representative of shade teas from the Uji region. Three weeks before the manual harvest, the tea bushes are covered and up to 85% of the sun's rays are filtered out to help create what the Japanese refer to as the "taste of the shade". The result is a highly aromatic and complex tasting tea that contains very little tannins. The vegetal character evokes marine flavours of salt and iodine (fresh wakame seeweed) and green vegetable (spinach, swiss chard, and cooked celery) notes. Anji Bai Cha is a treasure of refinement visible in the sight of its beautiful threadlike leaves, resembling pine needles. In the infusion they blossom to provide a liquor of a translucent jade hue. On the palate, sweet and tangy flavors are enhanced by vegetal notes (bok choy), gourmet (pine nuts, butter) and flowers. A tasty tea with a sublime and delicate finish.
This fine bright green powder offers, when whisked, a gastronomic character with notes of cocoa and almond milk. On the palate it is soft and creamy backed by accents of green vegetables and chlorophyll. Dense, and with a slight and supportive astringency, this sleek matcha is sure to please!
This Matcha has an aroma of berries and dark chocolate. On the palate, you'll be seduced by the rich and full texture, and the surprising notes of Jerusalem artichokes.
These long mature leaves undergo a unique transformation in their home of Hou Keng village. Easy to prepare, this tea has a full and balanced liquor, highlighted by a greasy silky texture. Dominated by gourmet vegetal notes, with refined floral nuances that add to its fascinating rusticity. Its finish is slightly mineral and evokes its mountainous forest origins leaving us with a calm soothing note. What else could one want?
Here is a "Precious Dew" from the Shizuoka region produced from the Samidori cultivar, often used to make gyokuro and matcha. The dry leaves display the characteristic depth of shade-grown teas, with their dark hue and intoxicating smell of raspberry. The delicately sharp liquor is smooth and is accompanied by vegetable accents of spinach and sunflower seed. Exquisite!
This Corean tea is entirely picked and transformed by hand. The result is of a rare complexity: sweet scents of green peas, kombu seaweed and raisins; body dominated by herbal aromas with hints of chestnuts and peat; lightly tart and marine-like finish with fruity and floral undertones. A true delight for both mind and body.
This small batch of Sencha is a special lot from a section of M. Sakamoto’s garden where Koshun cultivar is grown rather than the traditional Yabukita. The rare beauty of his gardens and the elegance of his teas prove M. Sakamoto a very mindful producer, one who knows how to get the best out of his experimentations.
A delicious matcha with an excellent quality / price ratio brought to us by the Osafumi brothers, second generation producers. This matcha comes from the mythical region of Uji, near Kyoto (the former capital of Japan), and more precisely from Ujitawara, hometown of Nagatani Soen, inventor of the sencha tea style. Its powerful and tasty emulsion offers a velvety texture and a slightly bitter-sweet flavor, with notes of oily grass and snow peas. A touch of gentle iodine tickles the palate, overshadowing everything.
